VietNamNet Bridge – In late June and early July (lunar calendar), farmers in Hung Yen begin to harvest longan and prepare for processing dry longan, a famous specialty.

They use the best varieties of longan to process dry longan or Long nhan.
These longan varieties are only planted in Hung Yen.

Processing dry longan is a traditional trade in Hung Yen. Old people
and kids can earn several USD per day from stoning longan.
They can process 30-50kg of longan a day, being paid VND3,000-5,000/kg.

The tool used to stone longan is called “xoay.”

After being stoned, longan pulp is dried in kilns. Previously, longan pulp
was dried under the sun. However, this method is not hygienic and time-consuming.

Longan pulp is dried for 15 hours and packed for export.
Lotus seed and longan pulp soup used to be Hung Yen’s specialty for kings.
