VietNamNet Bridge – Around 20km from Hanoi’s center, Ngu Cau village is specialized in producing rice papers, which are used to roll fried meat rolls.
Ngu Cau villagers have made rice sheets for nearly four decades. Ngu Cau rice paper has become
a brand for its perfect quality.
Rice paper is made from rice and salt.
The quality of rice paper depends on the rate of salt and rice powder. On average, one kilo
of rice powder is mixed with 500-700 grams of salt.
Ngu Cau people now use machines to make rice paper. The village currently has 50 rice paper
making machines, producing 2.5-3 tons of rice paper per day.
Rice papers are dried under the sun.
Drying is a very important step. If rice papers are over dried, they will be broken.
Both old people and kids can do this job.
Ngu Cau rice sheets are exported to some Southeast Asian countries.
