The restaurant’s manager said that this is a special dish which requires “secrets” to keep the fish head to be alive though the fish body was fried.
This dish is priced VND380,000 ($19), more expansive than normal fish dish because of its difficult processing method. To enjoy this dish, customers have to order in advance.
