At the time of Tet festival, the Jrai ethnic community in the Central Highlands province of Gia Lai gathers to slaughter pigs to make smoked pork dishes. Tet is a time when people gather to drink ruou can ( wine drunk out of a jar through pipes) and enjoy traditional dishes
The pigs selected for meat are the best, stocked in the forest, fragrant and firm. The finest parts of the buttocks, tenderloin and thighs are used to make smoked pork dishes
