A plate of Phu Yen-style chicken rice.

The Phu Yen-style chicken rice mesmerizes food lovers with its juicy chicken flesh and flavorful rice.

The local cook often chooses free-range chicken meat for the dish as its flesh is soft and lightly chewy. After being boiled, the meat is shredded into thin slices by hand instead of being cut.

Rice is soaked in water and then stir-fried with some cooking oil. It is then cooked using the broth from the boiling chicken, following which turmeric powder is added to give its distinct light yellow color.

However, what makes the dish special is the dipping sauce and pickled onions.

The dipping sauce is a mixture of fish sauce, lemon juice, minced garlic and chili. The sweetness and sourness of the dipping sauce can awaken diners’ taste buds.
