A two-member Vietnamese team will take part in the fifth International Catering Cup to be held in Lyon, France next January.

Duong Thi Hai Anh is head chef at Nineteen 11 Restaurant & Bar, and Nguyen Thi Thuy is head pastry chef at D'Alice Dessert and Tea House, both in Hanoi.

They won the Vietnam competition organsied by Work Global in HCM City from February 13 to 19.

The contest, held for the second time in Vietnam, attracted 12 two-member teams working in the catering industry. All received a week's training from famous French chef Fabien Pairon before the competition.

The criteria to win were hygiene, safety, flavour, aspects, experience, creativity, and team spirit, Pairon said.

The International Catering Cup is held every two years by the National Confederation of Charcutiers Catering (CNCT).

It is open to all professionals aged at least 23 from the food trades involved in a commercial catering activity either as an employee or a manager.

Vietnam took part in the competition for the first time last year and finished fourth out of 12 teams.
