Chef Sam Aisbett from Akuna told VietNamNet that the restaurant did not feel any pressure after receiving the Michelin star. “We just focus on bringing the best cuisine to our customers," he said. "Vietnamese cuisine is developing very well compared to a few years ago. I think Vietnamese cuisine will continue to expand, grow stronger, and absorb more of the world's culinary quintessence.”
Mr. Gwendal Poullennec, International Director of the Michelin Guide, commented: "Vietnam has become an attractive destination on the world culinary map in the eyes of tourists."
According to Ha Van Sieu, Deputy Director of the Vietnam National Administration of Tourism, culinary tourism is currently a strategic direction of Vietnam's tourism industry. "The tourism industry identifies cuisine as a prominent strength, a typical product of each region, thereby enhancing the competitiveness and brand of Vietnam's tourism. After the announcement in 2023, over the past year, we have recorded positive responses from tourists."
"This year, the increasing number of restaurants in Vietnam appearing in the Michelin Guide is an important foundation showing that Vietnamese cuisine is recognized, meets international standards, and is positioned as a global brand; thereby building trust and attracting tourists from all over the world to Vietnam," he added.
Several restaurants in Hanoi and Ho Chi Minh City have been listed in the Michelin Selected category, highlighting their exceptional quality and culinary excellence.
The number of Bib Gourmand establishments has doubled compared to last year, with 18 restaurants in Hanoi, 24 in Ho Chi Minh City, and 16 in Da Nang. Of the 29 new locations this year, 16 are from Da Nang, 5 are in Hanoi, and 8 are in Ho Chi Minh City.
Chef Adrian Chong from Sol Kitchen & Bar, which received the award in the Bib Gourmand category, said, "Whether we have a Michelin star or not, the pressure is the same. The important thing is that customers come to us and we see and understand their reactions and feelings about the food. We will focus on bringing the best culinary experience to our diners."
The number of Michelin Selected restaurants has nearly doubled compared to last year, with 40 new establishments being honored. In total, Hanoi now has 33 Michelin Selected restaurants (with 5 new additions), Ho Chi Minh City has 47 (with 16 new additions), and Da Nang has 19 restaurants.
According to the Michelin Guide, Da Nang is a new addition to the Michelin Guide culinary handbook in Vietnam. This city represents the cuisine of the Central region while reflecting the influence of French, Chinese, and Southeast Asian cuisines.
Among the 16 new dining establishments from Da Nang on the Bib Gourmand 2024 award list are names familiar to both domestic and international tourists, such as Be Ni 2, Indian Aroma Restaurant, and Mi Quang Sua Hong Van. Meanwhile, among the 19 Da Nang restaurants listed in Michelin Selected, well-known names include Nam Danh and Mi Quang Co Sau.
At the awards ceremony, Michelin Guide also presented several other accolades. The Young Chef Award was given to Duy Nguyen from Little Bear, a Michelin Selected restaurant in Ho Chi Minh City. The Sommelier Award was presented to Toan Nguyen from La Maison 1888 in Da Nang. The Service Award was given to Mr. Nguyen from Si Dining, a Michelin Selected restaurant in Da Nang, for his outstanding service skills.
2024 marks the second year that the Michelin Guide has visited Hanoi and Ho Chi Minh City and the first time it has visited Da Nang to award stars and recommend restaurants for the guide.
All selected dining establishments are evaluated and ranked according to five globally consistent criteria: quality of ingredients, cooking skills, harmony of flavors, the chef's personality expressed through the dish, and consistency of the dish over time and across the entire menu.
The 2024 Michelin Guide continues to showcase Vietnam's culinary prowess, with new Michelin-starred restaurants reflecting the country's growing prominence in the global food scene. These establishments not only highlight the diversity and richness of Vietnamese cuisine but also contribute to the country's appeal as a top culinary destination.
Currently, the Michelin Guide covers more than 40 countries and territories. First launched in 1900 by the Michelin Tire Company in France, the guide aims to provide international tourists and local diners with recommendations for the world's best restaurants, honoring cuisine, and promoting tourism.
