Ginger jam village in Kim Long ward, Hue city in the central province of Thua Thien-Hue is at its busiest time now as the Lunar New Year festival (Tet) is drawing near.
Every year at the beginning of the 12th lunar month, the ginger jam village in Kim Long begins making jams to prepare for the upcoming Lunar New Year festival. Manual methods are used at all processing steps. After peeling off the skin, they cut the ginger into thin slices and sock them in water to make it less spicy. The ginger slices are washed and drained before putting into sugar. The ginger slices will be mixed with white sugar. It takes about 40-45 minutes to fry ginger with sugar. This is the most important step in making ginger jam. The ginger jam is cooled down in five minutes. At present, only five households in the ward are producing ginger jam. A ward resident, Mr Tran Huu Nam said that his household produces 3 tons of ginger jam for Tet. Ginger jam is kept in a cool dry place before packaging.
