In preparation for the upcoming Lunar New Year Festival (Tet), residents in Kim Long ward in Hue city have been busy preparing ginger jams to serve customers in the build up to the festival.
Kim Long ginger jam village is the only place in the ancient city of Hue that has preserved the craft of making jam in preparations for Tet. Kim Long ginger jam is famous for its distinct chilly flavor. The ginger itself is cut into thin slices. The Ginger slices are then soaked into cool lemon water for approximately 30 minutes. After the ginger is washed with clean water, the artisans begin to mix the ginger with white sugar. The mixture is then put onto a hot stove for one hour. Artisans then have to stir the ginger continuously to avoid it burning. The dried ginger then is put into a tray with paper. The entire process of making ginger is conducted manually by artisans without using additives. At present, Kim Long ward is home to 20 households who make ginger jam for Tet. Kim Long ginger jams are ordered by traders from Da Nang, Quang Nam, Quang Ngai, and Ho Chi Minh City throughout the year. Each kilo of ginger jam is sold at between VND55, 000 and VND70,000. |
