Vietnam's fish sour soup.

In the category of "the best soups cooked with vegetables", the Vietnamese rustic fish sour soup was recommended by Taste Atlas. The harmonious combination of sour, sweet and spicy flavors of this soup was praised. Vietnamese soups often have a sour taste from tamarind or pineapple, which is typical in the tropical climate, besides other spices and veggies such as tomatoes, okra, bean sprouts.

The seafood usually used in this dish is catfish. However, some areas use carp or snakehead fish. Taste Atlas said it is a cool, nutritious soup that is suitable with white rice.

In the category of "the best dishes made from beef", Vietnam's pho bo (beef noodle) was once again named. It has two most popular versions, with rare or cooked beef. The broth, which is made from simmered beef bones, ginger, grilled onions, star anise, cinnamon, and fish sauce, is considered a highlight of the dish. 

In addition, on the list of 50 best dishes in Southeast Asia 2023 announced by Taste Atlas on February 15, Vietnam’s bo nhung giam (vinegared beef) continues to be mentioned.

This type of hot pot has the sour taste of vinegar, sweetness of coconut water, and aroma from lemongrass, onion and other spices. When the broth is boiled on the stove, diners drop sliced beef and vegetables into the pot.

Previously, with 4.8 out of 5 points, Vietnamese banh mi was also rated by Taste Atlas as one of the world's best street foods in 2022.
