Will Courageux, 32, a French content creator who has been working in Vietnam for nearly 10 years, has a YouTube channel with over 1.2 million followers.

Will has introduced a popular dish that he loved from the first taste. He said he loves the dish so much that he "can't leave Vietnam." The dish is ‘rau muong xao toi’ (stir-fried morning glory with garlic).

A few weeks ago, Will and a friend visited a popular beer restaurant in Hanoi. When the hot stir-fried morning glory with garlic was served, he couldn't contain his excitement and immediately took a large piece.

Even though the French YouTuber said nothing, his facial expressions revealed his satisfaction about the rustic Vietnamese dish.

He said rau muong xao toi is the most popular dish at many restaurants and beer parlors in Vietnam.

Will tried it for the first time during a trip to Vietnam eight years ago and still remembers being unable to stop eating because of the combination of crispy green morning glory and aromatic fried garlic.

Since then, rau muong xao toi has been his favorite dish, which he orders several times a week.

Will introduced rau muong xao toi to his relatives and friends who visit Vietnam, and they all agreed that the dish was great.

Many foreign travelers to Vietnam also express their love for the rustic dish. These include two well-known foreign YouTubers currently living and working in Vietnam - Jongrak (from South Korea) and Brandon Hurley, 36, from the US.

Jongrak noted that most Koreans order stir-fried morning glory when they are in Vietnam. Brandon described the dish as crunchy, refreshing, and well-seasoned.

Of the "100 Best Stir-Fried Dishes in Asia" list released by well-known Taste Atlas last July, five were from Vietnam, including stir-fried morning glory with garlic (ranked 13th), stir-fried pho (27th), stir-fried vermicelli with crab (65th), stir-fried chayote (68th), and sautéed snails (71st).

Taste Atlas describes stir-fried morning glory with garlic as a traditional Vietnamese dish suitable for vegetarians, making it a great side dish with white rice.

The secret to a delicious stir-fried morning glory with garlic lies in the blanching before stir-frying with garlic, and a sauce of salt, sugar and fish sauce.
