Taste Atlas describes the dish as a flavorful hotpot featuring a tangy broth made with vinegar, sweet coconut water, lemongrass, onions, and various spices. Diners cook thinly sliced beef and fresh vegetables in the simmering broth. Some variations include seafood such as shrimp and squid for added depth.

The platform also emphasized that rice paper wrappers and a well-crafted mam nem (fermented anchovy dipping sauce) elevate the dish to perfection.

Bo luc lac (shaking beef) (4th place): A simple yet delightful dish where beef is cut into bite-sized cubes, marinated, and quickly seared over high heat. It’s typically stir-fried with bell peppers, tomatoes, and onions. The beef is cooked just right to retain its tenderness and natural sweetness, delivering bold flavors and a captivating aroma.

Bo Kho  (Vietnamese beef stew) (8th place): A traditional dish from southern Vietnam, bo kho is beloved for its rich, aromatic broth and tender yet slightly chewy beef. The stew’s flavors are enhanced by fragrant spices, including lemongrass, cinnamon, chili, black pepper, and garlic. It’s often served with bread or noodles.

Bo Ne (sizzling beef) (14th place): Originating from Phan Thiet and Nha Trang, bo ne is a popular breakfast dish. It gets its name from the sizzling oil and butter that “jumps” on the hotplate, prompting diners to “dodge” (or “ne”) to avoid getting splashed.

Bo Nuong Ong Tre (Grilled Bamboo Beef, final entry): A specialty from the Central Highlands, particularly around Pleiku, this dish involves marinating strips of beef in soy sauce, sugar, salt, pepper, onions, garlic, chili, and green peppers before grilling them in bamboo tubes. It is often served with steamed white rice.

Established in 2015 and headquartered in Zagreb, Croatia, Taste Atlas is a global culinary map highlighting traditional dishes from around the world.
