Ranking 7th with a score of 4.3 out of 5, rau muong xao toi is described as a "traditional Vietnamese dish" that is particularly suitable for vegetarian diners.

The dish is made with simple yet flavorful ingredients: water spinach, garlic, cooking oil, salt, sugar, and fish sauce.

According to Taste Atlas, the cooking process involves blanching the water spinach before stir-frying it with garlic, salt, and sugar. Fish sauce is added near the end of cooking to enhance the flavor.

Often served immediately after preparation, this dish is regarded as "an excellent accompaniment to plain white rice."

Hue’s fermented shrimp (tom chua) also earned a spot on the list, celebrated for its distinctive preparation and taste.

Taste Atlas noted that despite being fermented, the shrimp retains a fresh appearance. The process involves cleaning and decapitating the shrimp, fermenting them in rice wine for 7-10 days, and then mixing them with galangal, bamboo shoots, garlic, red chilies, fish sauce, and glutinous rice.

Quay (crispy crullers) and fresh herbs (rau song) were also included in the list.

Taste Atlas, founded in 2015 and based in Zagreb, Croatia, is widely recognized as a global culinary map featuring traditional dishes from around the world.

Matija Babić, the platform’s founder, emphasized that the rankings are based on opinions and reviews from food experts and critics, ensuring the credibility of the awards.
