The persimmon season in Da Lat begins in late August and ends in early December. Farmers not only harvest ripe fruits but also make dried persimmons.
Imported to Vietnam decades ago, Japanese persimmons are grown in Da Lat because of the suitable climate and altitude conditions and are considered a specialty fruit in this foggy city. 
In the harvest season, farmers wash ripe persimmons and dry them.

Ms. Dang Thi Thu Van has nearly 500 persimmon trees planted for over 40 years on ​​nearly one hectare. Her family has produced dried persimmons for years.

Like other gardeners in Da Lat, Van’s family uses Japanese technology. Accordingly, persimmons are hung for about three weeks in sunny weather, with outdoor temperatures of 25-30 degrees Celsius, after they are dried in the oven for about three hours at 50 - 60 degrees Celsius. 
About 5-7 kg of fresh persimmons will produce 1kg of air-dried persimmons, priced at about 500,000 VND/kg.
